Shooting someone elses pistol on private property while I am waiting for my permit to come through? Could I shoot my Uncles gun on our property legally? Dying to shoot pistols again, but dont want to break any laws.

or outside of NY. I'm pretty sure you could drive down to PA and rent some pistols. Though I don't know what store/range does that.

Short and definitive answer. No unless you are under 21 and under direct supervision of a certified instructor.
You also have to be at a range at an incorporated club, not just any private property.

Yeah that is the unfortunate thing about living in the PRNY everything to get you used to seeing or handling a handgun is illegal until the King's men have decided you are worth of placing you hands on the magical handgun.

this is true, and something i find to be ridiculous.

And i would never encourage someone to break the law; even if it was shooting your uncles handgun, on private property and you have extensive firearms experience so there is no real safety concerns.
